### 越後維新 湯澤本店 About the Venue

Introduction

#A bowl of ramen to warm up a snowy day

In freezing weather, our bodies instinctively crave rich, hearty broths and warming calories. Echigo Ishin Yuzawa Honten is a highly-rated local ramen venue, and its biggest draw is its homemade Koshihikari rice flour noodles. These noodles, blended with rice flour, are incredibly smooth and have a unique soft, chewy texture that's completely different from pure wheat noodles.

We highly recommend the rich seafood tonkotsu tsukemen. The dipping sauce arrives in a stone pot, still bubbling, a concentrated broth of bonito umami and pork bone collagen that's thick but not greasy. Dip the chilled, firm noodles into the hot soup, and the contrast of temperatures will awaken your taste buds. Finally, add dashi broth to dilute the dipping sauce and drink down every last drop of the rich essence. The thick chashu pork is seared to perfection, offering a tempting char and melting in your mouth. Watching the lively scene of office workers and skiers slurping noodles side-by-side, you'll feel the authentic daily pulse of Yuzawa.

### 涮涮鍋 保よし About the Venue

Introduction

#Warm up after skiing with a hot pot

Shabu-shabu Yasuyoshi is a long-standing local favorite, famous for its Echigo mochi pork shabu-shabu. If you find tonkatsu too heavy, shabu-shabu is the gentlest way to experience Echigo pork. This venue is beloved by local families, offering a wide variety of dishes from set meals and donburi to hot pots.

We especially recommend their shabu-shabu. The clear kombu broth gently simmers, and the thinly sliced pink pork cooks quickly with just a few swishes. The meat is incredibly tender, and the fat melts on your tongue with a refreshing sweetness, not greasiness. Dipped in the special sesame sauce or ponzu, the delicate flavor of the meat truly shines. The set meals come with generous side dishes, and the atmosphere provides the comforting feel of a traditional Japanese venue, imbued with a nostalgic Showa-era charm. On a cold winter night, when you want to enjoy a warm meal and hot soup without the hassle of cooking, this venue will not disappoint.

PLATE 03–01

### 人參亭 About the Venue

Introduction

#Refuel after skiing with a bite of tonkatsu

For meat lovers or those who've just finished an intense ski session, Ginseng Pavilion is the ultimate energy boost. They use Echigo Mochi Buta, a local Niigata pork known for its fine texture and complete lack of gamey odor. The signature thick-cut pork loin tonkatsu is generously portioned, with a golden-crisp breading that crackles delightfully when sliced.

The most captivating part is the fat layer, which melts in your mouth with a rich, sweet flavor. It needs no heavy sauce to mask it; just a pinch of salt is enough to bring out the pork's natural sweetness. The supporting act, white rice, is, of course, authentic Uonuma Koshihikari, with distinct grains that perfectly complement the pork's rich fat, making it easy to finish every last bite. The spacious seating and friendly service make it a top choice for families and big eaters alike.

PLATE 04–01

### 雪ん洞 About the Venue

Introduction

#Experience Niigata Rice Power in a Single Onigiri

This is no ordinary onigiri; it's an iconic Echigo-Yuzawa delicacy. Located at the entrance to the Ponshukan sake museum inside the station, Yukindo is famous for its "Bomb Onigiri," a must-visit photo op for almost every traveler. Made with South Uonuma's top-grade Koshihikari rice, each onigiri uses a full cup of rice, so large it can cover your face, and feels substantial in your hand.

Despite its size, the artisans' shaping technique is exquisite, preserving an airy texture within the onigiri. Each bite is fluffy and soft, completely free of the dense, hard texture of machine-pressed rice. With over a dozen fillings to choose from, the freshly made onigiri features crispy nori seaweed and is piping hot. As you take a big bite, the savory filling and sweet rice intertwine in your mouth, delivering immense satisfaction. Many skiers enjoy these on the return Shinkansen or grab one as a carb-bomb before hitting the slopes—it's a highly efficient way to experience the power of Niigata rice in one stop.

PLATE 05–01

### 湯澤釜藏 About the Venue

Introduction

#A pot of Koshihikari rice, a taste of snow country happiness

It would be a shame to come to Niigata, known as "Japan's rice granary," and only eat ordinary white rice. Yuzawa Kamakura, located inside Echigo Yuzawa Station, elevates the act of eating rice into a ritual. Their biggest selling point is freshly cooked Uonuma Koshihikari kamameshi (rice cooked in an iron pot). When the server brings out your personal iron pot and lifts the wooden lid, the rich aroma of rice mixes with the steam, creating a truly moving experience.

The rice grains are translucent and shiny, with excellent elasticity and stickiness, and a natural sweetness that spreads in your mouth as you chew. The golden, crispy crust at the bottom of the pot adds a delightful layer of texture and flavor. Even simple pickles and miso soup become extraordinary when paired with such high-quality rice. In winter, enjoying a steaming hot pot of rice while gazing at the snowy scenery outside is undoubtedly the happiest meal you'll have after arriving in Yuzawa.

## Kojimaya 小嶋屋

PLATE 06–01

### 小嶋屋 About the Venue

Introduction

#A bowl of delicate soba, a taste of snow country memories

Kojimaya is one of Niigata Prefecture's most iconic soba brands, and you can easily enjoy it right inside Echigo-Yuzawa Station. Like Nakanoya, Kojimaya specializes in funori soba, but compared to Nakanoya's robust chewiness, Kojimaya's noodles are cut finer, offering a silky, delicate texture. This type of noodle, once presented as a tribute to the Imperial Household, is renowned for its exceptional "koshigoshi"—a smooth, effortless glide down the throat, requiring almost no chewing before it slips into your stomach.

For first-time visitors to Echigo-Yuzawa, or those traveling with elders and children, Kojimaya offers a spacious and comfortable dining environment. With ample seating and high turnover, even during peak hours, you won't wait long. It's a relaxed, consistently high-quality choice for experiencing local soba culture.

## Nakanoya Soba Yuzawa shop 中野屋 湯澤本店

PLATE 07–01

### 中野屋 湯澤本店 About the Venue

Introduction

#Savoring Snow Country Flavors: A Slurp of Funori Soba

When it comes to soba in Echigo-Yuzawa, Nakanoya Yuzawa Honten reigns supreme as a must-visit, often-queued venue. Their specialty is funori soba, unique to Niigata. Unlike typical soba that can easily break, Nakanoya’s noodles are kneaded with funori seaweed during preparation, giving them a distinctive sheen, an incredibly smooth and springy texture, and even a subtle hint of the ocean. The noodles are beautifully presented on a rectangular wooden tray called a "Hegi," making for an appealing visual.

Beyond the noodles, their maitake mushroom tempura is also exceptional. Sourced from the snow country, the maitake mushrooms are plump and juicy. Lightly battered and deep-fried at high temperatures, they offer a crispy, refreshing, and non-greasy bite. A dip in soba dipping sauce further enhances their umami flavor. This venue is extremely popular, and waiting an hour during peak meal times is common in high season. We recommend arriving right at opening or avoiding the midday rush. The delightful sensation of those slippery, smooth noodles, slurped down in one satisfying gulp, is absolutely worth the wait.

PLATE 08–01

### 新潟前 壽司處 大壽司 About the Venue

Introduction

#Experience the Freshness of the Japan Sea in Every Sushi Bite

Beyond its famous rice, Niigata's prime location on the Sea of Japan ensures exceptional seafood freshness. For high-quality sushi in Echigo-Yuzawa, Niigata-mae Daizushi is a consistently well-regarded venue. It specializes in the Niigata-mae style, committed to using only fresh, seasonal catches from the Sea of Japan, expertly paired with local Koshihikari rice for the sushi vinegar rice.

The sushi here isn't about flashy creativity; it's about letting the inherent sweetness and quality of the ingredients shine. Winter yellowtail, sweet "nanban" shrimp, and firm white fish are among its strengths. The rice is perfectly pressed, dissolving on the tongue to blend seamlessly with the fish. The chefs are friendly and the pacing of the meal is just right, making it comfortable even for solo diners at the counter. Prices are mid-to-high range, but considering the ingredient quality and the convenience of a tourist area, the value is excellent. It's an ideal choice for those seeking a refined seafood experience during their trip.

## Chaya Moritaki 森瀧

PLATE 09–01

### 森瀧 About the Venue

Introduction

#A pot of udon to warm a snowy night

Tucked away in a corner of the hot spring district, Chaya Moritaki is a legendary eatery that blends local cuisine with a nostalgic ambiance, making it a perfect stop after an evening soak. The most popular dish is the winter-exclusive Udon Suki hot pot, a massive pot piled high with fresh shrimp, crab legs, white fish, and an abundance of mountain vegetables. The broth is a clear golden hue; it looks light but is actually a concentrated essence of sweet seafood and mountain flavors.

As the broth simmers, the house-made udon noodles absorb the rich soup, becoming silky and smooth, making it impossible to stop at just one bite. Beyond the hot pot, the fried maitake mushrooms are also outstanding, arriving at the table in a generous, crispy, and light mound. The venue features traditional tatami seating, creating a lively and cozy atmosphere, almost as if you've been invited into a Japanese friend's home. Given its popularity, we recommend calling ahead for a reservation to secure your spot!
