As someone who isn't a huge fan of Tokyo Ramen, I (VeRiTy) didn't have high expectations at first. But walking into Ebimaru Ramen felt like stepping into a Western restaurant. The staff and chef, realizing I was a foreigner, greeted me in clear, simple English and led me to my seat, handing me a stemmed glass of iced water to begin the dinner service.

After a seasonal mousse appetizer, the main event arrived: the Pure Lobster Broth Ramen. The rich shrimp broth immediately filled my mouth with the mellow sweetness of lobster, incredibly fragrant and not at all salty. The noodles were accompanied by a slice of French bread spread with cream cheese, offering a refreshing counterpoint. Both the chashu and sous-vide chicken breast were delicately seasoned, perfectly complementing the broth and adding layers of texture.

The grand finale, the risotto, was a truly ritualistic experience. Rice, shrimp, and a raw egg yolk in a sizzling hot stone pot emitted a delightful crackle as six spoonfuls of shrimp broth were poured over them. But it wasn't over yet: the staff then grated cheese tableside, watching the fine flakes fall like snow, melting into the golden egg yolk and rice. It was a feast for both the eyes and ears.

The entire experience offered perfectly portioned dishes, a culinary journey from appetizer to risotto that felt like a grand performance. For me, this wasn't just a bowl of ramen; it was a complete French meal. The lingering impression ultimately led me to take home a jar of their lobster chili oil, extending the amazing experience.
